Pasta with Radicchio Tondo, Sausage and Red Wine

    1 head radicchio tondo

    350 gr pasta
  • Image
    150 gr fresh sausage

    1/2 cup strong red wine

    oil

    salt and pepper

    grated cheese

Wash the radicchio and slice it thinly. Crumble the sausage and brown it in the oil. Add the radicchio and sauté until wilted. Deglaze with wine and add a bit of water to finish cooking if it becomes too dry. Season to taste and toss with cooked pasta. Serve with grated cheese for those who desire it.
