Wash the radicchio carefully and cut into half-inch slices. Beat the eggs in a bowl with salt, pepper, and the minced pistachios, then pour the flour and breadcrumbs into two separate dishes. Dust the radicchio in the flour, dip it into the beaten eggs, and then coat it in breadcrumbs, applying slight pressure so that they adhere well. Fry in plentiful heated oil and drain on paper towels.
